Well that was because I hadn’t made the right salad! Today I bring you a dream-worthy salad! A healthy Kale and Cabbage Slaw Salad.

This is one of those obnoxiously healthy, yet strangely delicious, salads that people would pay $20 for in California.

And unlike all my other salads, it’s 100% raw, 100% paleo, 100% vegetarian and 100% vegan if you take out the cheese. But don’t take out the cheese, please! Feta: I heart you.

The blend of different textures is wonderfully satisfying: the crunch of the cabbage; the smooth creaminess of the avocado; the bursts of sweet from the blueberries and the soft tang of the goat’s milk feta. All tossed in a light champagne vinaigrette. It’s fabulous!

I originally served this as a side dish with pork chops when my husband was last in town. I cobbled it together out of a lack of all other vegetables, and I was pretty sure that he was going to complain about it.

But he didn’t…

And then the next day he ate it again…

And then the day after that he said, “Is there no more slaw?” and he looked so sad I almost died.

There is a little bit of chopping involved but hopefully you find that as therapeutic as I do. See. This salad is healthy for the body and mind! My price just went up to $30 a bowl in California.

I eat a generous portion as a main course, and it is filling and strangely satisfying. You could also serve this as a side dish to compliment any kind of grilled or baked meat, or top it with my go-to Foolproof Rosemary Chicken.

I know you are skeptically looking at me through one eye, but I would never lie to you. This salad is delicious! Fresh, crunchy, flavorful and healthy!

Healthy Kale and Cabbage Slaw Salad

You will LOVE this salad as a main course or as a side dish! The blend of different textures in this easy and healthy Kale and Cabbage Slaw Salad is wonderfully satisfying: the crunch of the cabbage; the smooth creaminess of the avocado; the bursts of sweet from the blueberries and the soft tang of the goat’s milk feta. It’s fabulous!

Ingredients

    For the Slaw:
  • ½ head of a small green cabbage, sliced into thin ribbons
  • 6 stalks of Tuscan/Dinosaur kale, ribs removed and sliced into thin ribbons
  • 1 ½ red bell peppers, thinly sliced
  • ½ green pepper, thinly sliced
  • 1 fuji or gala apple*, grated with the peel on
  • ~ ¼ cup Vidalia onion**, sliced paper thin
  • Avocado (½ per serving)
  • Blueberries
  • Goat’s milk feta cheese (I get a brand that comes from Greece because it tastes tangier and just plain better.)
  • For the Dressing***:
  • ½ cup champagne vinegar
  • ¼ cup olive oil
  • 2 teaspoons Dijon mustard
  • 2 tablespoons honey, more to taste
  • 2 teaspoons garlic, chopped
  • salt
  • pepper

Instructions

  1. Add all the dressing ingredients in a bottle, cover, and shake vigorously until mixed; taste and adjust.
  2. Throw all the slaw ingredients in an extra large mixing bowl, toss to mix everything up. Pour some of the salad dressing over top and toss to coat evenly. Repeat until the slaw is glistening but there is no extra in the bottom of the bowl.
  3. Serve.

Notes:

*If you are photographing your dish, serving company or are just a perfectionist {high-five!}, then squeeze a little lemon over the grated apple right after you grate it and before you add it to the salad. Same goes for the avocado.

**If Vidalia onions are not available in your State/country {sadness}, you can use any other mild onion, but, just know, it will change the flavor profile slightly. It might be best just to leave them out.

***I don’t actually measure my dressing on a regular basis. I eyeball it. I make sure I have a ratio of 2:1 vinegar to oil, I add about a little bit of garlic, a little bit of Dijon mustard, a bit of honey or brown sugar, salt and pepper, and then I taste and adjust.

Another note on my light salad dressings. These will not stay emulsified because there is waaaay too much vinegar to oil and not nearly enough mustard or garlic to compensate. They will stay emulsified long enough to dress a salad and serve it, but you have to shake it vigorously. No little back and forth motion is going to cut it.

    Feta lovers unite! I’m a huge fan of any salad topped with feta! But the real question that I’m wondering is if this salad costs $20-30 in California, then what does it cost in Atlanta? Or even better, what does it cost in Saratoga Springs, NY…because I’m going to need one of those soon!

      Haha! There is probably a $5 discount for Atlanta and a $10 discount for Seratoga Springs; however, I do charge for travel! Probably better off just breaking out the knife yourself! :-)
