I know this is my second chocolate chip cookie recipe in this year’s 12 Day Cookie Marathon, but this one has peanut butter.

In real life when I get stressed, I bake chocolate chip cookies.

Not just a little stressed but dealing with a new job, a divorce, moving, selling a condo and a car in a different city kind of stressed. The kind of stress that not even a run or yoga can fix.

Usually I bake my favorite chocolate chip cookie recipe because the repetition is meditative, but sometimes I deviate to address a particular craving.

{Cough, cough} Peanut butter.

Chewy Peanut Butter Chocolate Chip Cookies

Chewy Peanut Butter Chocolate Chip Cookies

These Chewy Peanut Butter Chocolate Chip Cookies are soft and thick just like your favorite chewy chocolate chip cookie but packed with peanut butter flavor.

Ingredients

  • 3 ¼ cups (415g) All purpose flour
  • 1 cup (110g) Cake Flour
  • 1 teaspoon (4g) baking powder
  • 1 teaspoon (5g) baking soda
  • 2 teaspoons cinnamon
  • 1 cup (226g) butter, slightly softened
  • ¾ cup (190g) peanut butter (I bake with Jiff creamy)
  • 1 ¼ cups (306g) packed light brown sugar
  • 1 ¼ cups (260g) granulated sugar
  • 2 eggs (100g)
  • 1 Tablespoon vanilla extract
  • 10 oz semi-sweet chocolate, chopped (I used Guitard)

Instructions

  1. Preheat your oven to 350. Whisk together the flour, cake flour, baking soda, baking powder and cinnamon; set aside.
  2. Combine butter, peanut butter granulated sugar and brown sugar, and beat until creamy. Add eggs one at a time and beat after each addition; add vanilla with the last egg.
  3. Slowly add flour mixture until just combined (5-7 additions); then stir in chocolate.
  4. Make large balls of dough (about 1 ½ inches in diameter) or you can use a 2 inch cookie scool and roll them into balls.
  5. Bake at 350 for 15 minutes or until the outsides have browned but the centers still look soft. Cool for 10 minutes on the cookie sheet and then transfer to a wire rack to cool completely.

Notes:

This dough is fabulous to freeze for those little moments when only a warm, chocolate chip cookie straight from the oven will do. Just make into balls and freeze in a zip-top bag. Bake per the instructions but they will take an extra 3-5 minutes.

You sure have a ton on your plate – am hoping your condo sells quick -or has already sold- as the housing market is picking up like crazy here in the Atl these days – a sellers paradise, but a buyers nightmare – but still, places are going like hot cakes, the house next door sold in 4 days! 4 DAYS!!!
    Just like those houses, that GORGEOUS stack there would disappear if they were in front of me! Loving the subtle hint of cinnamon in these – they truly look magical indeed!
