I feel a tad guilty because I have been enjoying Pimms Cups for months now and I haven’t shared with you. For shame!

Our obsession started when my fiancé and I went down to New Orleans for a friend’s wedding. The grooms organized this Amazing Race through the city (genius and fun!) and one of the stops was to get a Pimms Cup at Napoleon’s House. I only had one magical sip of my friend’s Pimms Cup but it was enough to begin a month long quest to re-create the refreshing flavor at home!

If you haven’t had the pleasure of enjoying a Pimms Cup on a hot day, or any day for that matter, you haven’t lived. There is no way to describe the flavor. It has all the refreshing qualities of lemonade and cucumber infused water with an adult twist.

You know what the best part is? Each Pimms Cup is only 80 calories!

Super easy. I also encourage you to continue the rejuvenating cucumber trend with some homemade tzatziki dip!

Cucumber Pimm’s Cup

This Cucumber Pimm’s Cup is an easy, refreshing Summer cocktail with Pimm’s, ginger ale, lemon juice and fresh cucumbers! Relaxation in a glass!

Total: 2 minutes
Servings: 1 Cocktail

Ingredients  

  • 1 oz Pimm’s No 1
  • 1 inch cucumber sliced thin
  • 1 lemon juiced
  • 3.75 oz ginger ale
  • Ice

Instructions 

  • In a 14 oz glass combine all ingredients. Stir to mix. Enjoy.

  1. I’ve never been to New Orleans, but I’m dying to see it. This drink sounds light, refreshing and perfect for warm weather! 🙂

    1. That was the first time I’d ever been there and we loved it. Next time I want to visit the plantations and historic homes! A Pimm’s Cup in the South is an absolute necessity!

      1. Ohh…I can just imagine how refreshing this would taste. I LOVE cucumbers. I like it peeled too lol. I, personally never really like the skin on. This drink sounds amazing. I can sure use one right now.

        I don’t have one fav summer drink, but I’m always down for almost anything with strawberries, peach, or pineapples. I love fruity cocktails!

          It was slightly better peeled but it always seems like such a shame to get rid of the dark green part.

  3. My favorite summer drink is strawberry lemonade…or any frozen drink like a pina colada!! This looks so good and refreshing! I bet the mint would be great in it
